Dessert Recipes For The (Lazy) Sweet-toothed

Being lazy is a blessing as it makes us think smarter when getting things done, am I right? And so this trait can possibly not hold us back from enjoying a good bite of sugary goodness and help ourselves in our lockdown blues. Here are a few quick and easy dessert recipes that are perfect for us couch potatoes and a good small step into the world of cooking.

The classic chocolate mug-cake

What goes best in a mug other than coffee? Cake! Don’t want to be a bad influence here but these quick and easy mug cakes are perfect for your midnight cravings or a quick dessert after dinner. One of the easiest dessert recipes you can ever make!

 The ingredients you need are:

  1. maida (3 tbsp)
  2. sugar (2 tbsp)
  3. cocoa powder (2 tbsp)
  4. baking powder ( ¼ tsp)
  5. milk (3 tbsp)
  6. vegetable oil or butter (2 tbsp)
  7. vanilla essence ( ½ tsp)

Mix these well in a mug and microwave for 1-2 minutes (time may slightly vary depending on the microwave oven) and you have your delicious mug-cake.

Quick cookie mug-cake

This is a quicker version of a mug-cake that you can make with cookies like Oreo.

For 6 Oreos, you would need 5 tablespoons of milk and 1 tablespoon sugar. Ground the cookies well and add the milk and sugar. Mix the ingredients well till it forms a batter-like consistency.

Microwave for around 1 minute (time may slightly vary depending on the microwave oven). Don’t overheat.

Coconut Macaroons

This recipe is just too easy (and perfect if you love coconut).

All you need is shredded coconut (500g) and condensed milk (1 tin). Mix the ingredients (you can also add vanilla), and make little domes on a tray (lined with butter paper). Bake in a preheated oven (180oC) for 10-12 minutes.

No-Bake Biscuit Pudding

This is a no-bake dessert with nothing but coffee and buttery goodness. (This is a personal recipe shared by food blogger Anna Thomas and I’m glad that she did! You can check out more of her desserts at @cravingsneverdie on Instagram.)

For this you need,

  1. Parle G or similar sweet biscuits (36 nos)
  2. Coffee powder (1 tbsp)
  3. Water (¾ cup)
  4. Butter (100g)
  5. Powdered sugar (¾ cup)
  6. Cocoa powder (2 tbsp)

You can start by brewing your coffee and leaving it to cool. Mix the butter and powdered sugar.

 Divide the mixture into two and transfer one portion to a separate bowl. Add cocoa powder to one portion and mix well.

Now dip the biscuits in coffee and immediately take them out. Arrange them on a pan as the base for the pudding. (size being 4×3- 4 biscuits long and 3 biscuits wide)

Spread the cocoa-butter mixture onto the biscuit base. Arrange the second biscuit layer.

For the last layer, mix both the butter mixtures (butter-sugar mix and butter-cocoa mix) together and spread.

Refrigerate for around 5 hours or leave it to set overnight and there you have it!

Another two-ingredient dessert recipe (from @cravingsneverdie), that you can make with just condensed milk and cocoa powder:

Mix 1 tin of condensed milk and 2-3 tablespoons of cocoa powder. Microwave the mixture for 1 minute. Stir until it’s smooth and melted.

Pour the mixture into a pan (so you can cut into cubes) or roll it into balls.  Refrigerate for up to 1 hour to let it set and it’s ready to serve!

You can also add chocolate chips or nuts for some extra crunch.

Now, this takes a few more ingredients, but the preparation is rather easy and the final result is just divine. To make a banoffee pie you would need

  1. Sweet biscuits or crackers (1 packet)
  2. 4-5 bananas
  3. Condensed milk (1 tin)
  4. Fresh cream or milk cream ( ½ cup)
  5. Heavy cream (1 cup)
  6. Butter (2 tbsp)
